Chickpeas and mayonnaise don’t immediately sound appetising but, trust me, it’s delicious! Serve with a salad, spread onto crispbreads, rolled up into a wholemeal wrap with crunchy lettuce or over a baked potato. Sometimes I add fresh, roughly chopped parsley, rocket and tinned sweetcorn, too. It will be fine in the fridge for 4-5 days, so it’s great for packed lunches.
