Hummus has become one of those staples that is pretty much always on hand in my fridge to make a quick sandwich or snack. If time is short, then there is nothing wrong with shop-bought, but homemade is far cheaper, speedy to make and doesn’t use so much single-use plastic packaging. Perking it up with additional vegetables – spinach leaves in this case – also helps boost the nutrient and fibre content a little.
