This is probably one of the simplest recipes, but it makes a wonderful difference when added to steamed vegetables, bean stews, baked fish or chicken. If you don’t eat dairy, you can also freeze herbs in olive oil in ice-cube trays for a similar effect.

Ingredients

  • 125 g salted butter, softened
  • 6 tbsp finely chopped fresh parsley
  • 3 small

Method

Mix all the ingredients together and wrap in parchment paper or keep in an airtight container in the fridge for 2 weeks, but best to freeze and use within a month – just slice as and when it’s needed.
