This is an easy dairy- and gluten-free cake recipe, and the plums can be replaced with various other fruits, depending on what’s in season. Berries, thinly sliced apples and rhubarb would all work well – in fact, a rule of thumb is if the fruit you want to use can be made into a compote, then you can use it in this cake. It is really light and doesn’t use too much sugar, yet it still hits the spot with a cup of tea after lunch.
