This supremely simple and versatile vegan pudding can be finished off with any number of toppings. My favourite garnishes are raspberries and lime zest, or sliced banana and toasted hazelnuts with a bit of whipped coconut cream, but take your pick. You could try sliced poached pears, fresh berries, orange zest or any nuts you like – they’re all delicious. You honestly won’t believe that this is made with tofu – it’s so creamy and smooth.
