Method

Should the Turtle possess no Eggs, the following method of making Mock Eggs is often used:

Break and beat thoroughly one fresh Egg; then take the yolks of three hard-boiled Eggs, and rub them into a fine paste with about a teaspoonful of butter. Mix this with the raw Egg and roll into pellets of the identical size and shape of the Turtle Eggs, let them lie in boiling water about two minutes, and then drop into the Soup.
