Put chops in pan, season with salt and pepper. Cover with Roquefort cheese, grated, bits of butter, dredge with flour and bake in a moderate oven 20 minutes and pour over all the following sauce:

½ teaspoon beef extract dissolved in ½ cup of hot soup stock a few drops of Tabasco and ½ teaspoon Worcestershire Sauce.
