Method

Grind the raw white meat left over, add half the quantity of bread, soaked and pressed dry, ½ teaspoon salt, a few drops of onion juice, little pepper, 1 tablespoon soup stock, egg and 4 mushrooms and 2 truffles, all sliced fine and mixed together.

Liver or pork sausage meat may be used in place of the chicken meat and seasoned to taste.
