Press cottage cheese dry as possible, season with salt, pepper and paprika, and shape in form of apples. Put apple stem in top and clove at blossom end. Cook 2 or 3 beets and when tender and still hot, squeeze out the juice. Dip cheese apples in this red juice and serve as a garnish with salad course or as a salad on lettuce leaf surrounded with mayonnaise.
