Method

Press through a ricer or coarse sieve ½ lb. of fresh yellow American cheese, season lightly with paprika. Take a heaping tablespoonful, place in palm of hand and roll and shape in form of carrot. Place a sprig of parsley in stem end and serve as a garnish with salad course.
