  • 1 sliced pine-apple
  • grated rind of 1 lemon
  • 1 bottle of champagne, (or seltzer and claret)
  • 4 oranges cut into pieces
  • grated rind of 1 orange,
  • 1 bottle of red wine
  • 1 stick of cinnamon, (broken into pieces)
  • ½ bottle of arrak or rum
  • Juice of 4 lemons
  • 1 stick of vanilla bean, (about 4 inches long)
  • ½ quart of boiling water
  • 1 pound of sugar
  • ½ cup maraschino cherries if desired


Boil spices thoroughly with the water. Remove them and pour water into large earthen dish. Add lemon and orange juice and rind, also pineapple and sugar, (sugar and fruit to be prepared in a separate dish) then add wine and arrak, cover and heat on back of stove, add champagne before serving.
