  • 2 cups lentils
  • ¼ cup celery, diced
  • 3 qts. cold water
  • 1 small onion
  • 3 lbs. brisket of beef, or
  • salt and pepper
  • 1 lb. smoked sausage, or
  • 2 tablespoons flour
  • A ham bone
  • Croutons


The lentils are washed in cold water, then soaked in cold water over night. Made same as Dried Pea Soup. One cup of strained tomato improves the flavor.
