Soak the matzos a few minutes in cold water and then drain and squeeze dry. Heat the fat in a spider, add the onions, fry to a golden brown, then add the soaked matzos, stir until it leaves the spider clean, then add seasoning, the egg, slightly beaten and then the matzos or cracker meal, just enough to shape into balls the size of a walnut. Drop into boiling soup 15 minutes before serving.
