  • 4 or 5 yolks
  • 1 cup milk
  • 3 tablespoons sherry
  • 1 cup cream
  • Salt and pepper to taste


Beat the yolks until very light, add the rest of the ingredients and cook over boiling water, until thick and smooth, stirring constantly.
