Wipe, trim off extra fat. Grease the broiler with some of the fat. Broil over a clear fire, turning every 10 seconds. Cook 4 or 5 minutes if liked rare; longer if well done.
Place on a hot platter and season, serve with Maitre d'Hotel Sauce.
Beef steak should be tender and cut
Porterhouse steak may be served with Mushroom Sauce.
