Ingredients

  • 10 lbs. beef
  • ¾ tablespoon saltpetre
  • 1 cup brown sugar
  • Salt and pepper to taste
  • ¼ tablespoon soda
  • Ginger and a little garlic if desired

Method

Place in a stone jar, cover with large soup plate and allow to draw juice over night. Then cover with cold water and leave in this brine ten days. Tongue or goose-meat may be pickled in the same manner.
