Wash, remove the veins and arteries and stuff with bread crumbs, onion juice, melted fat, salt, pepper and chopped parsley. Sprinkle with salt and pepper, dredge with flour and brown in hot fat. Place in deep pan, half cover with boiling water, cover closely and bake slowly 2 hours, basting every 15 minutes. Add more water if necessary. Strain the liquid, add lemon juice and parsley.
