Prepare meat and salt as desired. Have a frying pan very hot without any fat, put in the chops and cook one minute, turn and sear the other side, to harden the albumen, and keep in the juices; then cook more slowly until done. Stand them up on the fat edge to brown the fat, without overcooking the meat. Serve hot, either plain, with Tomato Sauce, or with peas.
