Method

Cover with boiling water slices of liver cut ½ in. thick, let stand 5 minutes to draw out the blood; dram, and flour and remove thin outside skin and veins. Sprinkle with salt and pepper, place in frying pan with hot bacon fat and fry until brown on both sides. Remove to hot platter. Serve with bacon.
