Soak calf's brains in cold water to cover for 1 hour. Remove membrane and parboil 20 minutes in boiling salted water with 1 tablespoon of vinegar. Drain, put in cold water as soon as cold, drain and separate in small pieces. Use same as Sweetbreads.
