Ingredients

  • lbs. chicken
  • ¼ cup butter
  • 1 cup water
  • 1 small onion
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ¼ lb. mushrooms
  • ¼ cup Madeira wine

Method

Cut the chicken at joints, brown in the butter, add water, the onion, salt, pepper, mushrooms, and a few minutes before serving the wine. Cook two and one-half (2½) hours or until tender.
