  • Goose fat
  • Salt
  • ¼ teaspoon sugar


Remove gall bladder carefully from liver, then soak several hours in cold, salted water, drain and place a small amount of sugar where gall has lain. Place in sauce pan with very hot goose grease to cover. When browned on one side turn and brown on the other. Do not let them cook too long, or they will become dry.
