Clean well and draw. Fill with Stuffing for Game, or season with salt, pepper and add a tablespoon vinegar and an onion to remove the wild flavor. Let stand over night. If duck is tough steam or cook one hour, then place in roasting pan on rack in hot oven and roast same as chicken. When nearly done add a little sherry wine. Baste with the wine and let covered a little while and then serve with Currant Jelly Sauce.
