Scrape new potatoes and let stand in cold water ½ hour. Boil until tender in salted, boiling water, tablespoon salt to 1 quart water, drain and dry; add 2 tablespoons melted butter and tablespoon chopped parsley or if you desire 1 teaspoon caraway seed; shake well over fire and serve hot.

May also be served with White Sauce.
