  • 4 cold potatoes
  • ½ cup milk
  • spk. pepper
  • ½ teaspoon salt
  • 2 tablespoons butter
  • 1 tablespoon chopped parsley


Cut the potatoes into cubes or thin slices. Put, with the milk, into a pan or double-boiler, and cook until they have absorbed nearly all the milk. Add the butter and seasoning, cook 5 minutes longer and serve hot. One tablespoon parsley, chopped fine, may be added with the seasoning. Another method is to heat the potatoes in a Thin White Sauce. Serve hot.
