  • 4 cold, baked sweet potatoes
  • 1 tablespoon butter
  • ¼ cup milk or cream
  • Salt and pepper


Scoop out potatoes, add salt, pepper, cream and butter, a few grains of sugar, if desired, and mash and beat until creamy, or, when just done, mash with butter, milk and seasoning, and bake in a spring form, in a hot oven until brown. When done remove side of form and garnish top and sides with riced Irish potatoes.
