  • cups cold boiled potatoes, riced
  • 1 heaping cup flour
  • ¾ teaspoon baking powder
  • ½ teaspoon salt
  • 2 eggs


Spread half of the flour over the potatoes, place egg in center and with fork beat and knead the mixture, gradually adding the rest of the flour with the salt and baking powder mixed. When smooth, shape into one long thick roll; cut roll into inch pieces and shape the size of your middle finger to resemble asparagus. Drop one at a time in boiling salted water (1 teaspoon salt to 1 quart water), let simmer 10 minutes. Drain and pour over them bread crumbs, browned in butter, or, they may be dipped in egg and then in cracker crumbs and fried like Potato Croquettes, in deep hot fat, or, the dumplings may be fried in deep hot fat without the eggs and crumbs. Serve hot.
