  • 2 tablespoons goose fat or butter
  • ½ onion


Soak the matzos (unleavened bread) in water and squeeze dry. Heat the fat in the spider, add the onions, cut very fine, and fry a golden brown; then add the soaked matzos, stirring occasionally until it will not stick to the pan. Let cool, season, add the eggs and the matzo meal and shape into balls.
