Take the Broad Noodles, cook them in boiling-salt water until they are soft. Drain through strainer, and pour cold water over them to prevent pieces from adhering. Make one and one-half cups White Sauce as follows:


  • 2 tablespoons butter
  • 2 tablespoons flour
  • ½ teaspoon salt
  • cups hot milk


Dissolve a speck of soda in a little hot water and add to the milk. Heat the butter, add the flour and seasoning, and then gradually the hot milk.

Put a layer of boiled noodles in a buttered baking dish, sprinkle with grated cheese; repeat, pour over white sauce, cover with buttered crumbs, and bake until crumbs are brown.
