  • 5 yolks, beaten
  • ½ cup cream
  • ½ cup vinegar
  • ½ cup water
  • teaspoon cayenne pepper
  • teaspoon salt
  • 1 teaspoon mustard
  • 1 tablespoon flour
  • 2 tablespoon sugar


Beat the yolks well in a cup, fill up the cup with cream. Mix the dry ingredients, wet with a little water, add to the yolk and cream. Place in double boiler and let cook until thick and smooth, stirring constantly.
