Wipe tomatoes, plunge in boiling water, one minute; drain and remove skins, place on ice to cool. Place on lettuce leaves and put about 1 tablespoon Mayonnaise, over each tomato. Serve cold. The tomato may be cut in half crosswise; or, into quarters, ⅔ down and let spread to form a flower with stem end up, placing olive in center and mayonnaise over top.
