Two cups cold cooked sweetbreads, or chicken, or veal, diced; ½ cup celery, cut in small pieces; ½ cup olives, cut in rings; capers; slices of fresh pear and broken nut meats, mixed. Asparagus tips may be used, but they must be carefully placed in the jelly just when it hardens.
