Take fresh cottage cheese, press dry enough to grate, add caraway seed and only a little salt.
Spread in earthen dish, but do not press it down. Cover with plate. Put in a warm place, stir every day with a fork, until ripe and clear. Place butter in spider, add cheese and let come to a boil slowly, stirring constantly.
When melted take from stove and add the beaten egg. Put in china cups, well rinsed with cold water, and serve, when cold.
