  • 1 tablespoon butter
  • ¼ lb. American cheese, cut fine or grated


Melt the butter, add cheese and pepper. Stir until melted, then beat in gradually the yolk of egg, diluted with cream, and cook, stirring constantly until thick and smooth. When smooth, set aside to become cold in small jars.
