  • 1 tablespoon butter
  • ½ lb. cheese
  • ¼ cup milk
  • 1 egg
  • teaspoon salt
  • teaspoon mustard
  • Speck of cayenne pepper


Melt the butter, break the cheese into small pieces, and add with the seasoning to the butter. When the cheese melts, add the egg, beaten with the milk, and cook one minute. Serve at once on toast or wafers.
