  • 1 cup white wine
  • ½ cup water
  • 3 slices lemon
  • teaspoon cinnamon
  • ¼ cup sugar
  • 1 teaspoon potato flour
  • 4 yolks, beaten
  • 4 beaten whites of eggs


Mix the first 5 ingredients and boil until well flavored Moisten the potato flour with a little water and add to the wine mixture, stirring to avoid lumping. Then pour the hot wine gradually on the beaten yolks, stirring constantly to avoid curdling. Return to sauce pan, add part of the beaten whites heat through, and continue the beating. Remove to sauce bowl, place remaining whites on top sweetened with sugar.
