  • 1 cup wine, (sherry or Madeira)
  • 2 eggs
  • ¾ cup


Heat wine to the boiling point and pour slowly into the eggs that have been beaten light with the sugar, stirring all the time. Cook until thick, pour in sauce dish and keep warm until ready to serve.
