Take two quarts tart apples, stewed, strained and sweetened to taste. Cool and add one tablespoonful lemon juice and four yolks, well beaten. Turn this into a buttered dish and bake half an hour in hot oven. Cool, then spread with the whites of egg, beaten stiff, with four tablespoonfuls powdered sugar and one teaspoon lemon juice. Dust with sugar and return to the oven to brown. Serve either hot or cold.
