Ingredients

  • 5 cups milk, scalded
  • cup yellow cornmeal
  • ½ cup molasses
  • 1 teaspoon salt
  • 1 teaspoon ginger or grated lemon rind

Method

Pour milk slowly on the corn meal, cook in double boiler 20 minutes, add molasses, salt and ginger or lemon rind as desired Pour into buttered pudding dish and bake two hours in a slow oven. Serve with cream or butter.
