  • 1 pint milk
  • ½ cup flour
  • teaspoon salt
  • ¼ cup sugar
  • ¼ cup butter
  • 5 eggs, separated


Stir flour, sugar and salt with a little of the milk until smooth, then add the rest of the milk, hot, and cook until it thickens, about 10 minutes; add the butter and when well mixed stir it into the well beaten yolks; then fold in the whites, beaten stiff. Bake in well buttered pudding dish, in a pan of hot water in a moderate oven, about 30 minutes. Serve hot with vanilla, wine or Cream Sauce.
