  • ¼ cup milk
  • 2 tablespoons flour
  • 2 tablespoons butter
  • 2 eggs, beaten separately
  • ¼ cup orange juice
  • ¼ cup sugar
  • 1 tablespoon lemon juice


Heat the butter, add flour and then the milk and cook until smooth. Add sugar to the fruit juices. Combine the two mixtures, cool, add yolks, then beaten whites and bake as above. For Lemon Souffle take juice of 1 lemon and more sugar.
