  • ½ package (1 oz.) granulated gelatine
  • ½ cup cold water
  • 1 cup boiling water
  • 1 cup sugar
  • 2 cups orange juice
  • 3 tablespoons lemon juice


Soak the gelatine in the cold water, add the boiling water, sugar and juice; strain. cups of any other fruit juice may be used.

A pretty dish, resembling whole oranges, cut in quarters, is made as follows:

Cut oranges in halves lengthwise. Score with knife, extract and strain juice, without destroying the orange shell. Scrape out clean; set each shell upright in a cup and when the gelatine has partially hardened fill in orange cups.. Let stand over night to harden and when ready to serve, cut each piece in two equal parts lengthwise. Arrange in fruit dish and serve.
