  • 1 cup sugar
  • 2 tablespoons cornstarch or flour
  • 2 cups scalded milk
  • 1 egg
  • 1 scant cup sugar, melted to a brown liquid
  • ½ teaspoon vanilla
  • 1 quart cream


Make a custard of first four ingredients, as in Vanilla Ice Cream, No. 2. Then melt one scant cup of sugar in an iron spider, until it is a brown liquid, and pour it very gradually into the hot custard. Cool, add cream and flavoring, stir and freeze.
