Ingredients

  • 3 sticks or ¼ lb. Maillard's chocolate
  • ½ cup sugar
  • ½ cup hot water
  • 6 eggs, separated
  • 1 pt. cream

Method

Cook the water and sugar to a thin syrup, add chocolate, grated. Pour this gradually on to the 6 beaten yolks, add the 6 whites, beaten stiff; cool, then add the cream whipped stiff. Pour in a mould, and pack in ice and salt from 4 to 6 hours. Use 3 cups of ice to 1 cup salt.
