  • 1 cup milk
  • cup butter, or butter and lard
  • ¼ cup sugar
  • ½ teaspoon salt
  • 1 egg
  • ¾ yeast cake dissolved in ¼ cup lukewarm milk
  • ½ cup raisins, stoned and cut in halves
  • cup flour


Add butter, sugar and salt to the milk; when lukewarm add dissolved yeast cake, egg, well beaten, flour to make a stiff batter, add raisins; cover and let rise; spread in buttered dripping pan ½ in. thick. Cover and let rise again. Before baking melt 2 tablespoons butter and spread over the coffee cake; also sprinkle with sugar and cinnamon. If set at night use ½ the quantity of yeast, or.

Flour the board and take ¼ part of the raised Kuchen Dough, No. 1. Roll one-half inch thick and place in well greased, oblong shallow pans.
