Orange or Lemon Filling

• 2 oranges, juice and grated rind, or 1 lemon
• 2 whites of eggs, beaten stiff

To the beaten whites add the sugar gradually and then the orange or lemon rind and juice. Use between layers of Sponge or Angel Cake.
