  • 2 eggs
  • cups sugar
  • 5 tablespoons boiling water
  • 1 cup flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 teaspoon vanilla, or
  • Grated lemon rind


Put eggs and sugar into a mixing bowl and beat with the egg beater till very light. Add 5 tablespoons of rapidly boiling water and beat again. Mix flour with baking powder and salt. Stir this into the eggs quickly, add vanilla and when well mixed, turn at once into two well greased jelly cake pans and bake about 12 minutes in a quick oven. Reduce the heat as soon as well risen, and at the last turn out the burner, and remove the cake when firm.
