Ingredients

  • 9 eggs
  • cups sugar
  • 16 dates (sliced)
  • 3 tablespoons grated chocolate
  • 1 teaspoon cinnamon
  • 1 teaspoon allspice
  • 1 heaping cup cracker crumbs
  • 2 tablespoons wine, brandy or lemon juice

Method

Rub the dates to a smooth paste with the wine, brandy or lemon juice. Beat two whole eggs and seven yolks, add sugar, beat again, add the dates, chocolate and spices and cracker crumbs and stir in well, and lastly fold in the beaten whites of the eggs. Bake in a good sized spring form forty minutes.
