  • 5 tablespoons powdered sugar

Put chocolate, powdered sugar and boiling water over the fire and stir until smooth and glossy. Dip the tops of the eclairs in this as they come from the oven. When the chocolate icing is dry, cut open, and fill with the Custard Filling, or with sweetened and flavored cream whipped stiff.
