Method

Select 8 red apples, cook in boiling water until soft turning often. Have water half surround apples. Remove skins carefully that the red color may remain.

To the water add 1 cup sugar, grated rind of ½ lemon, and juice of 1 orange. Simmer until reduced to 1 cup. Cool and pour over apples.
